Orange and Apricot Chocolate Truffles

Hello Everybody,

Easter is fast approaching and I know you will all be craving some indulgent treats.  How about trying these Orange and Apricot Chocolate Truffles which have a much healthier slant to them than the processed chocolate eggs flooding the supermarket.

I’ve combined the nutty goodness of almond meal, to provide healthy fats, protein and calcium, together with juicy dried apricots which provide Vitamin A, C, E and potassium.   Apricots have a wealth of health benefits such as improving eye and skin health and gut health.  There is also a wonderful hit of orangy goodness providing a Vitamin C boost and anti-inflammatory polyphenols from the cocoa powder, which can help lower blood pressure. 

Best of all?  They taste and feel really indulgent when you take a bite.! 

For special occasions like Christmas, you could also add in a tablespoon of your favourite liquor/spirit.  Just add a little more almond meal if the mixture becomes too sloppy.

Orange and Apricot Chocolate Truffles

These are smooth, juicy, indulgent truffles with a healthy slant. They only take minutes to put together and can be enjoyed as an evening or after dinner treat.
Prep Time 10 minutes
Chill for 10 minutes 10 minutes
Total Time 20 minutes
Course Dessert, Snack
Cuisine British
Servings 12 truffles

Equipment

  • Mixing bowl

Ingredients
  

  • 1 cup ground almond meal
  • 1/2 cup dried apricots finely chopped
  • 3 tbsps Cocoa Powder
  • 1 orange rind and juice
  • 1 tbsp maple syrup
  • 2 tbsp extra cocoa powder to coat the truffles

Instructions
 

  • Mix all the ingredients together in a mixing bowl
  • When well mixed, place the mixture in the refridgerator to chill for 10 minutes.
  • When the mixture is firm, take a teaspoon of mixture and roll into a ball.
  • Coat each ball in some cocoa powder

Notes

These truffles can be kept in the fridge for up to 4-5 days.  
You can coat the truffles in other ingredients like desiccated coconut, melted chocolate, cake decorations or edible glitter.
